Chiloso Mexican Bistro Now Open in Denton

Chiloso Mexican Bistro keeps it simple and delicious.

The menu for Chiloso matches the vibes of Denton, constantly evolving and offering up something fresh and bold. Chef David Balli inherited his love for food and community from his mother and grandmother. Where many see cooking as a chore, David and his nephew Joe see it as an opportunity to share their appreciation for the hard work that goes into creating food from simple and fresh ingredients.

When you initially walk into Chiloso, the atmosphere resonates with that of Chipotle (yes, guac is still extra), and though it is a little slow as they work out the kinks, the end result is happy taste buds from a plate you get to customize to your own taste. The ambience is warm and welcoming, with a simplistic vibe. BONUS: They also have breakfast options including migas, stuffed grilled avocados, and huevos rancheros. Thy spice up the menu with daily specials that include a wide range of enchiladas and grilled fish tacos. Chiloso’s base menu offerings allow you make your own unique combination for a burrito, nachos, tacos, salads, or bowls with a selection of fire-grilled meats, taco meat, or smoked pulled pork with a selection of fresh ingredients and house-made salsas, sauces, and dressings.

Chiloso may also become your new happy hour spot. They haven’t set the hours and specials quite yet, but they are serving up margaritas with house-infused habanero tequila and a hard lemonade with serrano vodka on the drink menu. 

They will start regular hours next week, Monday - Friday 6am-9pm, Saturday 7am-10pm, Sunday 8am-10pm. They begin serving breakfast this weekend from open until noon, and daily specials begin each day at 10:30am.
